THYMIOPOULOS
Thymiopoulos family has been in agriculture and grape-growing in the village of Trilofos for generations. Apostolos Thymiopoulos was the first to vinify the family vineyards while studying oenology.
In 2005, he produced his first wine named “Earth and sky”. He truly believes in sustainable viticulture and minimum intervention during the whole winemaking process.
Apostolos applies this philosophy to produce ten different expressions of xinomavro, the renowned variety of Northern Greece, trying to reveal every aspect of its potential.
Apostolos was named Decanter’s ‘Rising Star’ of 2022 and his wines continue to impress, from his experiments with long-lived rosé styles to captivating single-vineyard xinomavro, all from certified organic vineyards.

Blend of the best parcels of the estate, 45 years old, certified organic. 70% are located around Trilofos village. 30% comes the surroundings of Fytia village.

Naoussa Alta 2020
Several parcels around the village of Fytia. 26 years-old, non-irrigated and certified organic vines. 8 months in French oak vats.

Rosé de Xinomavro 2021
Grapes are hand-picked, destemmed, macerated for 12 hours, fermentated with wild yeasts in stainless-steel tanks for 5 to 6 months.

Xinomavro Young Vines 2021
A blend of higher altitude parcels around the village of Fytia and the warmer, lower elevation parcels adjacent to the village of Trilofos. Vines are young and non-irrigated.

Kayafas 2017
Single xinomavro parcel planted 44 years ago near Trilofos village. Grapes are 80% destemmed, fermented with indigenous yeasts and macerated for 40 days.
